Gotta have my Tofu Scramble for Breakfast

This is my favorite breakfast.  It is easy, healthy and delicious.  I even have leftovers for tomorrow's breakfast.

Basic Tofu Scramble
1 yellow or white onion, chopped
1 block tofu, drained, pressed and crumbled
2 Tbsp. olive or vegetable oil
2 clove crushed garlic
1 Tbsp. GF Tamari sauce
1/4 tsp. tumeric

Heat oil in large saucepan.  Sauté onions and garlic until golden brown. Add tofu, soy sauce and tumeric and cook 3-5 minutes, stirring often.

Variations:
This particular one I added cooked broccoli and spinach. Add cooked vegetables to saucepan while you sauté the onions.

One of my favorites: Greek olives, capers and sundried tomatoes.

Whatever vegetables you like, add them, sauté them until browned before you add the tofu.

What's For St. Paddy's Day Dinner


What are you making for St. Patrick's Day?
I am sticking with the green. I am making the traditional steamed cabbage, steamed asparagus, fresh broccoli soup and my favorite, spinach quiche.  Since I will be working all day Thursday, I am prepping my quiche the night before.  I will take it out 1 hour before I bake it so my pan is not so cold.  The photo is of my uncooked quiche, however once it is done, it will be a beautiful golden brown on top.

Spinach Quiche

Crust:
1 Cup Bob’s Red Mill Gluten Free All purpose
 ¼ tsp. xanthan gum
½ tsp. salt
¼ cup olive oil
¼ cup ice water

Filling:
2 cups fresh cooked  or frozen frozen spinach, thawed and squeezed of excess water
¾ cup pureed silken tofu
1 chopped white onion
½ cup Vegenaise
½ cup gluten free original flavor soy milk
1 cup vegan shredded cheddar (I use Veggie Shreds)

Preheat oven 375°F.

Crust:
Mix all crust ingredients until dough forms.  Lightly grease a 9” quiche or pie pan.  Push dough into bottom of pan and push dough up the sides.

In a medium sized bowl, mix all filling ingredients. Pour into prepared crust pan. 

Bake 35-40 minutes.

Been So Sick and Eating Ready Made foods

I have been sick as a dog the last few weeks that is why I have not been posting.  My diet has consisted of: Amy's Frozen Black Bean Vegetable Enchiladas

Amy's Dairy Free Rice Macaroni and Cheeze
(Yes, I am in love with Amy's convenient foods)

Thai Food from our local Thai place

And one day I was feeling really groovy and wanted more than soup so I made pizza. 
I used Namaste Foods Pizza Crust Mix.  This is hands down the best crust I have encountered.  It is tasty and easy.  I buy it at Target for between $5-6.  It makes two delicious and filling pizzas.  Total prep and cooking time is about 40 minutes.  I added some pizza sauce, shredded soy mozzarella, cooked spinach, sliced crimini mushrooms and capers.  Delicious!  You can add any toppings you fancy.   The sky is the limit.
