Been So Sick and Eating Ready Made foods

I have been sick as a dog the last few weeks that is why I have not been posting.  My diet has consisted of: Amy's Frozen Black Bean Vegetable Enchiladas
Amy's Chunky Vegetable Soup
Amy's Split Pea Soup
Amy's Dairy Free Rice Macaroni and Cheeze
(Yes, I am in love with Amy's convenient foods)
Glutino Pretzels
Almond Dream Bites
Dr. Lucy's Chocolate Chip Cookies
Thai Food from our local Thai place

And one day I was feeling really groovy and wanted more than soup so I made pizza. 
I used Namaste Foods Pizza Crust Mix.  This is hands down the best crust I have encountered.  It is tasty and easy.  I buy it at Target for between $5-6.  It makes two delicious and filling pizzas.  Total prep and cooking time is about 40 minutes.  I added some pizza sauce, shredded soy mozzarella, cooked spinach, sliced crimini mushrooms and capers.  Delicious!  You can add any toppings you fancy.   The sky is the limit.
